Kantola or Spine Gourd is a seasonal vegetable, available only during monsoons. It is perfect monsoon vegetable loaded with nutrients
Wash the Kantolas well. Cut open the kantolas and chop them into thin slices. Tender Kantolas can be chopped alongwith the seeds. In case of ripe/ mature kantolas, the seeds are to be removed.
Chop the kantolas and keep aside
Heat oil in a pan. Add mustard seeds, cumin seeds, asafoetida and crushed garlic. Saute on low heat till the garlic turns golden in colour.
Add green chillies and onions. Saute till onion turns golden brown
Add chopped kantolas and turmeric powder. Cook until kantolas turn soft.
Add red chilli powder, cumin-corainder powder, garam masala and amchoor. Mix well.
Kantola sabzi is ready to be served with hot chapatis
