Dahi Baingan

Eggplants in yoghurt sauce

Wash the brinjals and cut into 3 inches long strips

Marinate brinjal with salt, turmeric and chilly powder

Shallow fry the brinjal pieces

Whisk curds and besan. Keep aside.

Heat oil. Add mustard seeds, fennel seeds and asafoetida.

Add onions, green chillies and ginger garlic paste. Saute till the onions turn golden brown.

Add chilly powder, cumin coriander powder and garam masala

Add curds gram flour mixture

Add fried brinjal. Cook for 5 minutes  and garnish with chopped corainder leaves.
