Kanji
Kanji is a healthy fermented beverage made using carrots, beetroot, mustard seeds and spices.
Wash and peel carrots and beetroot
Chop carrots and beet into 1.5 to 2 inches pieces
Blend yellow mustard seeds to a fine powder
Transfer chopped carrots and beet to a dry, clean glass jar
Add mustard powder, black salt, red chilli powder and water
Tie a muslin cloth around the neck of the bottle
Place the bottle in the sun for fermentation for 3 to 4 days
On fermentation, Kanji is ready to be served
