Mangalorean Ripe Mango Curry
A traditional Mangalorean, summer delicacy made with ripe mangoes, coconut and spices
Mangoes are washed and peeled
Dry red chillies, spices and coconut are roasted to make a masala paste
The masala paste
Peeled mangoes are cooked with jaggery and salt
Masala paste is then added to the cooked mangoes
The magoes are simmered in the coconut gravy
A tempering is added to the mango curry
