Red Amaranth Stir-fry

1 bunch Red Amaranth leaves

Amaranth leaves, washed and roughly chopped

Heat oil in a pan. Add mustard, udad dal, asafoetida, curry leaves, garlic and onions

Add chopped Amaranth leaves

Cover and cook for 8 to 10 mins

Once the leaves are cooked, add salt as per taste

Finally add fresh coconut

Serve hot with chapatis/bhakris
