Shev Bhaji
Shev Bhaji is a popular dish from the Khandesh region of Maharashtra. It i a spicy curry topped with shev (gram flour noodles)
Ingredients for the curry :
onion, dry coconut, ginger, garlic and dry red chillies
Saute the onions till they turn golden brown in colour
Add dry coconut, ginger, garlic and dry red chillies. Roast all the ingredients well.
Blend the roasted ingredients to a smooth paste
Heat oil in a pan. Add asafoetida, turmeric powder and the spice paste
Cook the masala well. Add red chilli powder, garam masala and salt.
Add water and bring the gravy to a brisk boil.
Garnish with coriander leaves
Ladle the curry into a serving bowl/plate. Top it with shev. Add lemon juice and garnish with corainder leaves. Serve with bhakris/chapatis.
