Sundal - a classic  South Indian delicacy prepared during festivals

Sundal is prepared with variety of legumes/lentils like chana, moong, rajma, peanuts,  chana dal, horsegram etc.

Sundal is prepared during festivals and more commonly during Navratri. It is distributed as prasad during Navratri.

The recipe for Peanut Sundal is quite simple.  Boiled peanuts are tempered with spices and garnished with fresh coconut.

Peanut Sundal

Pressure cook the  peanuts. Drain and keep aside.

Heat oil in a skillet. Add mustard seeds, udad dal , curry leaves, asafoetida, green chillies  and grated ginger.

Add boiled peanuts and salt. Mix well.

Add fresh, grated coconut

Garnish with corainder leaves
