Wash the mangoes and peel them.
In a mixing bowl, place the mango peels and add a glass of water.
Squeeze the mango peels with your hands and extract juice out of the mango peels as much as possible.
Discard the peels.
Heat a pan.
Add the skinned mangoes, the mango juice extracted from the peels and mix.
Add green chillies, jaggery, salt and mix.
Now, stir in the mango puree.
Cook covered for 5 minutes.
In the meantime, in a bowl, add the cornflour , little water and mix well.
Add the cornflour mixture to the mango curry.
Cook covered for 7 to 10 minutes. Keep this aside.
For the seasoning, heat 1 tbsp oil in a small pan.
Add udad dal, mustard seeds, curry leaves and dried red chillies.
When they start spluttering, pour the seasoning into the mango curry.
Serve the Mangalorean mango curry with steaming hot rice.
