Jowar Onion Roti and Vegan Cucumber Raita

Ingredients

For Jowar Onion Roti

  • 1 cup jowar (sorghum) flour
  • 1 large onion, finely chopped
  • 2 tbsp chopped coriander leaves
  • salt to taste
  • hot water to knead the dough

 For Vegan Cucumber Raita

  • 1 medium sized cucumber
  • ¾ cup whisked peanut curds
  • 1 cup of coriander leaves
  • ¼ cup of mint leaves
  • 1 green chilly
  • 2 cloves of garlic
  • a small piece of ginger
  • ½ tsp coriander seeds
  • ½ tsp cumin seeds
  • salt to taste
  • mint leaves for garnishing

Instructions

For Vegan Cucumber Raita

  • To make the raita, blend coriander leaves, mint leaves,green chilly, ginger, garlic, coriander seeds and cumin seeds to a coarse paste.
  • Grate the cucumber and keep aside.
  • In a mixing bowl, add grated cucumber, green masala paste, salt and whisked peanut curds. Mix well.
  • Transfer to a serving bowl.
  • Garnish with mint leaves and keep aside.

For Jowar Onion Roti

  • In a large plate or a bowl, take the jowar flour.
  • Add chopped onion, salt and chopped coriander leaves. Mix well.
  • Add hot water gradually and knead to a smooth dough.
  • Knead the dough well for 5 to7 minutes till it becomes super soft.
  • Take a small portion of the dough and roll into roti.
  • Place the roti on a hot pan and cook on both sides.
  • Repeat the same with rest of the dough.
  • Serve Jowar Onion rotis with Vegan Cucumber raita.
