Shevgyachya Shenganchi Aamti

Ingredients

  • ¾ cup masoor dal or tur dal
  • 1 ½  tsp turmeric powder
  • salt to taste
  • 3 drumsticks
  • 1 tsp mustard seeds
  • ½ tsp cumin seeds
  • few curry leaves
  • a pinch of asafoetida
  • 1 tomato, chopped
  • 2 tbsp goda masala
  • 1 tsp red chilli powder
  • 3 tbsp tamarind pulp
  • a small piece of jaggery
  • 2 tbsp chopped coriander

Instructions

  • Wash and soak the dal in water for 2 hours.  
  • Drain the water and transfer to a pressure cooker. Add 1 ½ cups of water. Add 1 tsp turmeric powder and salt. Pressurecook for 3 to 4 whistles. Keep cooked dal aside.  
  • Peel and chop the drumsticks into 2 inch pieces.   Wash and keep aside.
  • Heat a pan and add mustard seeds .
  • When the seeds start crackling, add cumin seeds, curry leaves, asafoetida and saute for few seconds.
  • Add chopped tomato and saute on low heat.
  • Add some water to avoid the spices from burning. 
  • Add chopped drumsticks, ½ tsp turmeric powder and mix well.
  • Add around ½ cup water an cook covered till thedrumstick is cooked.
  • Next, add cooked dal, goda masala, red chilli powder,salt, tamarind pulp and jaggery.
  • Add water if required to adjust the consistency of aamti. Mix well.
  • Cover and cook for 5 to 7 minutes.
  • Garnish withchopped coriander leaves. Serve hot with steamed rice.
