Red Amaranth Leaves Pachadi 

Made with red amaranth leaves and curds,  Amaranth leaves pachadi is a perfect accompaniment with steamed rice.

RED AMARANTH LEAVES  PACHADI

INGREDIENTS

Amaranth leaves, oil, mustard seeds, udad dal, asafoetida, curry leaves, green chillies, red chillies, salt and curds

STEP 1

Heat oil in a pan. Add mustard seeds, udad dal, curry leaves, asafoetida, green and red chillies. Saute.

STEP 2

Add chopped Amaranth leaves. Saute and cook for 5 to 7 mins.

STEP 3 

Whisk curds  in a mixing bowl

STEP 4 

Add cooked Amaranth leaves to the whisked curds

STEP 5

Mix well

STEP 6

Make a tempering of oil, curry leaves, red chillies  and pour it on the Pachadi.
