Banarasi Stuffed Red Chilli Pickle

Whole red chillies, washed and dried

Chillies, slit and deseeded

Roast mustard seeds

Roast cumin and fennel seeds

Roast fenugreek seeds 

Allow the roasted ingredients to cool down

Blend the roasted ingredients to a semi coarse powder

add salt, amchoor, hing, turmeric powder,  nigella seeds and oil  to the ground masala powder

Stuff chillies with the spice mix

Chillies dipped in oil and kept in sunlight for a week
