small sized brinjals

Slit the brinjals and keep them immersed in water

To prepare  the masala, roast dry coconut, onions, ginger and garlic

Blend roasted ingredients to a coarse paste

Add roasted peanut powder and  spices to the ground masala and mix well

Stuff brinjals with the masala

Heat oil in a pan and place stuffed brinjals

Add the remaining masala

Cover and cook till done

Garnish with chopped corainder leaves
