Steamed Cucumber Cake | Thekkareda Adde

 a traditional Mangaloreansnack made using rice, cucumber, coconut and jaggery.

Ingredients

  • 1 ½ cups ofrice
  • 2 medum sized cucumbers
  • 1 cup fresh, grated coconut
  • 1 cup jaggery powder
  • salt

Instructions

  • Wash andsoak rice for 2 to 3 hours.
  • Wash and peel cucumbers. Chop and keep aside.
  • Into a mixer jar, add chopped cucumber, soaked rice, grated coconut, jaggery powder and salt.
  • Blend to a smooth paste without adding any water.  
  • Grease a steel plate with few drops of oil. 
  • Pour the batter on to the plate.
  • Boil water in a steamer.
  • Place the plate in the steamer.
  • Steam for 10 to 15 minutes. 
  • Allow this to cool and then cut in to desired shapes.
  • Serve steamed cucumber cake as a tea time snack.

Notes

 You can also add cardamom powder and some chopped coconut pieces to the batter.
