Steamed Cucumber Cake | Thekkareda Adde
a traditional Mangaloreansnack made using rice, cucumber, coconut and jaggery.

Ingredients
1 ½ cups ofrice
2 medum sized cucumbers
1 cup fresh, grated coconut
1 cup jaggery powder
salt
Instructions
Wash andsoak rice for 2 to 3 hours.
Wash and peel cucumbers. Chop and keep aside.
Into a mixer jar, add chopped cucumber, soaked rice, grated coconut, jaggery powder and salt.
Blend to a smooth paste without adding any water.
Grease a steel plate with few drops of oil.
Pour the batter on to the plate.
Boil water in a steamer.
Place the plate in the steamer.
Steam for 10 to 15 minutes.
Allow this to cool and then cut in to desired shapes.
Serve steamed cucumber cake as a tea time snack.
Notes
You can also add cardamom powder and some chopped coconut pieces to the batter.
