Ukadiche Modak | Steamed Modak

a traditional Maharshtrian rice flour dumpling filled with coconut and jaggery mixture.

Ingredients

For the Outer Covering

  • 1 cup Rice flour  (chawal ka atta)                           
  • 1 cup Water
  • 1/2 tsp clarified butter (ghee)
  • a pinch of salt                                                 

For Stuffing

  • 1 cup Fresh grated coconut (nariyal)
  • 1/2 cup Grated jaggery (gud)
  • 1 tsp poppy seeds (khuskhus)
  • ½ tsp Cardamom powder (elaichipowder)
  • 1 tbsp broken cashew nuts (kaju) –optional
  • 1 tbsp Raisins (kishmish) – optional

Instructions

For the stuffing

  • Heat a  pan and add jaggery.
  • When the jaggery begins to melt, add the grated coconut and poppy seeds.
  • Cook on a slow flame till the jaggery melts completely and blends with the coconut.
  • Add cardamom powder and the dry fruits (optional)  and mix it.  Keep it aside.

For the Outer Covering

  • Heat 1 cup of water in a pan.
  • When the water starts boiling, add salt, ghee and  the rice flour.
  • After adding the rice flour, turn off the heat. Mix the mixture well. Cover the pan and keep it aside for 10 minutes. 
  • After 10 minutes, when the mixture is still warm, Knead it well for 10 minutes until it is pliable and smooth. Keep it aside.
  • Grease a modak mould using little oil.
  • Take a portion of the dough and press it int othe modak mould  and spread it evenly on all sides of the mould. 
  • Then,place a small portion of coconut jaggery stuffing in the centre through the cavity of the mould.
  • Take a small portion of the dough and seal the base of the modak.
  • Demould the modak from the mould. Repeat this for all the modaks.
  • Place all the modaks on a  banana leaf kept on the steamer plate.
  • Banana leaf prevents the modak from sticking to the plate.
  • Keep it in the steamer and steam the modaks on a medium flame for 10 to 15 minutes.
  • Remove the modaks from the steamer and let it cool a little.
  • Modaks are now ready to offer to Lord Ganesha.
