Wash the ridge gourds. Peel and chop them. The peels can be used to make chutney.
Heat oil in a pan.
Add mustard seeds, udad dal, curry leaves, chopped garlic, hing, dry red chilly, and chopped green chillies.
Saute for few seconds.
Add chopped onion and saute.
Add chopped ridge gourd and mix.
Add turmeric powder and salt. Mix well.
Add a tbsp of water. Cover and cook till ridge gourd turn soft.
Add fresh, grated coconut and mix well. Turn off the heat.
Serve ridge gourd stir fry alongwith dal-rice or sambar rice.
It can also be served with chapatis.
