Ingredients

  • ½ kg ridge gourds
  • 1 tsp coconut  oil
  • 1 onion, chopped
  • 1 tsp mustard seeds
  • 1 tsp udad dal
  • a pinch of asafoetida (hing)
  • 3 to 4 cloves of garlic, chopped
  • 1 dry red chilly, roughly chopped
  • 2 green chillies, chopped
  • 1 onion, chopped
  • ½ tsp turmeric powder
  • salt to taste
  • ¼ cup fresh coconut

Instructions

  • Wash the ridge gourds. Peel and chop them. The peels can be used to make chutney.
  • Heat oil in a pan.
  • Add mustard seeds, udad dal, curry leaves, chopped garlic, hing, dry red chilly, and chopped green chillies.
  • Saute for few seconds.
  • Add chopped onion and saute.
  •  Add chopped ridge gourd and mix.
  • Add turmeric powder and salt. Mix well.
  • Add a tbsp of water.  Cover and cook till ridge gourd turn soft.
  • Add fresh, grated coconut and mix well. Turn off the heat.
  • Serve ridge gourd stir fry alongwith dal-rice or sambar rice.
  • It can also be served with chapatis.
