Ridge Gourd Stir Fry – a simple and nutritious sabzi made with ridge gourd (turai)

Gourds are a group of nutrient rich vegetables but are often overlooked or overshadowed by other vegetables.  Gourds include vegetables such as bottle gourd, ridge gourd, ash gourd, bitter gourd, ivy gourd, spine gourd, pumpkin and zucchini.  They are low in calories and offer wide range of health benefits. They are quite versatile and can be used to make umpteen number of dishes. Each type of gourd has its unique flavour and texture.  Different types of gourds are used in a variety of dishes across various cuisines. They can be stir-fried, roasted, used to make soups, curries, fritters, desserts etc.

Ridge-Gourd Stir Fry

Ridge Gourd stir fry also known as Heerekai Upkari in Kannada and Peere Upkari in Tulu is a traditional South Indian dish made using ridge gourd and few basic spices.  Ridge gourd is a type of gourd which is elongated in shape and has ridges running over it. They are low in calories and rich in dietary fibre.  Ridge gourds are used to make stir-fry and curries. It is a healthy addition to any meal. Ridge Gourd Stir fry can be served as a side dish with dal rice, sambar rice or can be served with chapatis too.

List of ingredients to make Ridge Gourd Stir-fry

Ridge Gourds – Ridge Gourds known as Turai in Hindi, Heerekai in Kannada and Peere in Tulu is the star ingredient of this dish.


Herbs and  spices : mustard seeds, udad dal, green chillies, dry red chillies, curry leaves, garlic

Other ingredients : coconut oil, onion and fresh coconut

Step-wise recipe with pictures

Wash the ridge gourds. Peel and chop them. Use the peels to make chutney (Recipe for chutney is here)

Heat oil in a pan. Add mustard seeds, udad dal, curry leaves, chopped garlic, hing, dry red chilly, and chopped green chillies. Saute for few seconds.

Add chopped onion and saute.

Add chopped ridge gourd and mix.

Add turmeric powder and salt. Mix well. Add a tbsp of water.

Cover and cook till ridge gourd turn soft.

Add fresh, grated coconut and mix well. Turn off the heat.

Serve ridge gourd stir fry / Turai ki sabzi alongwith dal-rice or sambar rice. It can also be served with chapatis.

Ingredients

  • ½ kg ridge gourds
  • 1 tsp coconut  oil
  • 1 onion, chopped
  • 1 tsp mustard seeds
  • 1 tsp udad dal
  • a pinch of asafoetida (hing)
  • 3 to 4 cloves of garlic, chopped
  • 1 dry red chilly, roughly chopped
  • 2 green chillies, chopped
  • 1 onion, chopped
  • ½ tsp turmeric powder
  • salt to taste
  • ¼ cup fresh coconut

Instructions
