Knol Kohl sabzi

Knol Khol Sabzi – a simple sabzi made using Knol Khol/ Kohlrabi that’s available during winters.

Knol Khol or Kohlrabi belonging to the cabbage family is known for its round stem and nutritious leaves.  Kohlrabi looks like a turnip , but grows above the ground. It is not a root vegetable. It has crunchy and juicy texture with a slightly sweet flavour.  Kohlrabi can be enjoyed raw or cooked in variety of ways. It can be used to make sabzi, soup, stir-fry, fritters, pickles etc. Its leaves are also edible and can be used in salads or sabzis/curries.

About Knol Khol Sabzi

Knol Khol Sabzi is a simple everyday dish made by adding Knol Khol cubes and its greens to a tempering of mustard seeds, asafoetida, onion and garlic. Spices like green chillies, turmeric powder, red chilli powder, cumin coriander powder and garam masala are added to enhance the taste of Knol Khol.  The sabzi pairs well with phulka or naan. It can be served as a side dish with dal rice or sambar rice too.

List of ingredients to make Knol Khol sabzi

Knol Khol (Kohlrabi) : This is the star ingredient prociding a crisp and sweet flavour to the sabzi. The stem as well as the leaves are used to make sabzi.

Spices: mustard seeds, turmeric powder, green chillies, red chilli powder, cumin-coriander powder and garam masala

Other ingredients : Oil, onion, garlic and asafoetida.


Step-wise recipe with instructions

Wash Knol Khol and its leaves.

Peel  Knol Khols and chop them into cubes.

Chop the leaves and keep aside.

Heat 1 tsp oil in a pan. Add 1 tsp mustard seeds and ¼ tsp asafoetida. When the seeds start popping, add chopped onion, chopped garlic and chopped green chilly. Saute for few seconds.

Add Knol Khol cubes.

Add chopped greens.

Add salt and ½ tsp turmeric powder. Mix well.

Cover and cook till the Knol Khol cubes are cooked.

Add 1 ½ tsp red chilli  powder, 1 tsp cumin coriander powder and ½ tsp garam masala. Cover and cook for few seconds.

Serve hot with phulkas.

Ingredients

  • 3 Knol Khols with leaves
  • 1 tsp oil
  • 1 tsp mustard seeds
  • ¼ tsp asafoetida (hing)
  • 3 to 4 cloves of garlic, chopped
  • 1 medium sized onion, chopped
  • 1 green chilly, chopped
  • ½ tsp turmeric powder
  • 1 ½ tsp red chilli powder
  • 1 tsp cumin-coriander powder
  • ½ tsp garam masala
  • salt to taste

Instructions

  • Wash Knol Khol and its leaves.
  • Peel  KnolKhols and chop them into cubes.
  • Chop the leaves and keep aside.
  • Heat oil in apan.
  • Add mustard seeds and asafoetida.  
  • When the seeds start popping, add chopped onion, chopped garlic and chopped green chilly.  Saute for few seconds.
  • Add KnolKhol cubes and chopped greens.
  • Add salt and turmeric powder. Mix well.
  • Cover and cook till the Knol Khol cubes are cooked
  • Add red chilli  powder, cumin coriander powder and garam masala.
  • Cover and cook for few seconds.
  • Serve hot with phulkas.
