Phulka

Phulka – a traditional Indian flatbread made of wholewheat flour.

Phulka is a staple in Indian cuisine and is made on daily basis in most Indian homes.  It is served with sabzis , lentils, veg or non-veg curries. It is more than just a mere accompaniment. It is an important element of an Indian meal.

About Phulka

Phulka is an Indian flatbread made with wholewheat flour, water and salt. It plays an essential role in the daily meals in most Indian household. It serves as a perfect accompaniment to a number of Indian dishes whether it is sabzi, dals or curries.

It is made by kneading wholewheat flour with water and salt to a super smooth dough. The dough is then allowed to rest for 20 to 30 minutes. The key to making perfect phulkas depends on how well the dough is kneaded and the adequate resting time. Kneading the dough thoroughly helps to develop gluten which is important to make soft, fluffy phulka. Resting time of the dough is equally important as the process of kneading when it comes to making perfect phulkas.

The dough is then divided into small balls which are then rolled into thin, circular discs.  It is then transferred to a hot griddle. Once it cooks a bit and small bubbles start forming on the surface, it is flipped and allowed to cook for few seconds. It is then transferred to a direct flame where it puffs up like a balloon.

If you do not want to cook the phulka on direct flame, it can be cooked on the gridlle itself.  In this case, once the phulka has slightly cooked on one side, it can be flipped. With the help of a cloth, the edges of the phulka can be pressed to puff it up.

Once the phulkas are done, apply ghee on the suface and serve hot.

In a plate or a large mixing bowl, add 2 wholewheat flour.

Add salt. Add water gradually and start kneading.

Knead well for 10 to 12 minutes.

Add 1 tsp oil and knead till the dough becomes super soft.

Cover and rest the dough for 20 to 30 minutes.

After 30 minutes, knead the dough again for 2 minutes.

Divide the dough into small balls.

On the rolling board, sprinkle some flour and place one dough ball.

Roll the dough ball evenly to make circular discs.

Place it on a hot griddle.

One the phulka cooks a bit and bubbles start forming on the surface, flip it and cook for few seconds.

Now, using a kitchen tong, place the phulka on direct flame where it will puff up like a balloon.

Apply ghee on the flatbread.

Likewise make rest of the phulkas, apply ghee on the surface.

Serve hot with sabzi or curry of your choice.
