Dudhi Muthiya | Lauki Muthiya | Bottle Gourd Muthiya

Ingredients

  • 2 cups of grated bottlegourd (lauki/dudhi)
  • 1 cup of wholewheat flour
  • ¼ cup of semolina (sooji/ rava)
  • ¼ cup of gram flour (besan)
  • 1 large onion, grated
  • 5 green chillies
  • 1 inch ginger
  • 1 tbsp crushed coriander seeds
  • ½ tsp turmeric powder
  • 1 tsp cumin seeds
  • ¼ tsp baking soda
  • salt to taste
  • a pinch of sugar
  • 1 cup of chopped coriander leaves
  • 1 tbsp lemon juice
  • 1 tbsp oil

For Tempering

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • ¼ tsp asafoetida
  • few curry leaves
  • 3 to 4 green chillies, slit vertically

For Garnishing

  • 2 to 3 tbsp of chopped coriander leaves

Instructions

  • Peel and grate bottle gourd. Squeeze the water from the grated bottlegourd.  
  • Crush the green chillies and ginger. Keep aside.
  •  In a mixing bowl,add grated and squeezed out bottle gourd.
  • Grate onion, squeeze out the water from onions and add into the bowl.
  • Add wholewheat flour, semolina and gramflour.
  • Add crushed coriander seeds, turmeric powder, cumin seeds, crushed green chillies and ginger, turmeric powder, salt, baking soda, sugar, oil and chopped coriander leaves.
  • Add few drops of water. Mix well and knead into a smooth dough. 
  • Shape the dough into cylindrical logs and place it on a greased plate.
  • Place the plate in the steamer and steam for15 minutes.
  • Allow the steamed rolls to cool and cut into pieces.
  • For the tempering, heat oil in a pan.
  • Add mustard seeds, sesame seeds, asafoetida, curry leaves and green chillies. Saute for few seconds.
  • Add muthias into the tempering and give a gentle mix.
  • Add chopped coriander leaves and mix.
  • Serve hot with chutney or as it is.
