Wash the vegetables
Cut them into batons. Soak chopped banana in water to avoid it fom turning black.
In a pot/pan (I have used a clay pot), add yam, carrot,drumstick, French beans, pumpkin, snake gourd and raw banana.
Add 3 slit green chillies, curry leaves, turmeric powder, salt and 1 cup of water.
Cover and cook till the veggies turn tender.
In the meantime prepare the coconut masala by blending fresh coconut, cumin seeds, curry leaves and 2 green chillies to a coarse mixture.
Once the veggies are almost cooked, add the coconut masala into the pot.
Add 3 tbsp tamarind pulp. Mix well.
Cover and cook for a minute
Turn off the heat. Add a tablespoon of oil. Cover the pot for few seconds allowing the coconut oil to infuse its flavour.
Serve hot.
