Ingredients

  • 3 cups of cooked basmati rice
  • 1 tsp plus 1 tbsp oil
  • 4 eggs
  • 2 tsp black pepper powder
  • 7 to 8 cloves of garlic, chopped
  • 1 onion, chopped
  • 8 to 10 French beans, finely chopped
  • 3 green chillies, finely chopped
  • 1 carrot, finely chopped
  • 1 capsicum, finely chopped
  • 1 cup of chopped cabbage
  • 1 tbsp soya sauce
  • 1 tbsp red chilli sauce
  • 1 tsp vinegar
  • 2 tbsp chopped spring onion, greens
  • salt to taste

Instructions

  • Firstly chop all the veggies and keep aside.
  • Heat 1 tsp oil in a pan. Add the eggs, season with 1 tsp black pepper powder and salt, and scramble them until cooked. Set the scrambled eggsaside.
  • Heat 1 tablespoon of oil in a pan and add the chopped garlic.Saute on high heat for few seconds.
  • Next, add the chopped onions and sauté .
  • Add the chopped French beans, carrots, capsicum, and cabbage, and sauté on high heat for 2 to 3 minutes. Season with salt to taste.
  • Now, add the cooked basmati rice. The rice should be cooled before adding, or ideally, use a day-old rice stored in the fridge.
  • Add the scrambled eggs along with soy sauce, 1 tsp black pepper powder, and chili sauce.
  • Gently mix everything together.
  • Finally, add a teaspoon of vinegar and mix well. Garnish with chopped spring onion greens and serve hot.
