Palak Paneer Bhurji

Ingredients

  • 250 grams paneer
  • 1 small bunch of spinach
  • 2 onions
  • 1 large tomato
  • 2 green chillies, chopped
  • 1 tbsp chopped garlic
  • ½ tsp chopped ginger
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp cumin coriander powder
  • ½ tsp garam masala
  • salt to taste
  • chopped coriander leaves for garnishing

Instructions

  • Chop onion, tomato, palak, green chillies, ginger, garlic and keep aside.
  • Grate the paneer and keep aside.
  • Heat  oil in a pan.
  • Add cumin seeds. When the seeds start crackling, add chopped green chillies, ginger and garlic. Saute for few seconds. 
  • Add chopped onion and saute on low heat till the onions turn soft and golden in colour.
  • Next, add chopped tomato and saute till the tomato turns mushy.
  • Next, add turmeric powder, red chilli powder, cumin-corainder powder and garam masala. Mix well.
  • Add chopped spinach and saute for a minute or so.
  • Add grated paneer, salt and mix well.
  • Finally, garnish with chopped coriander leaves.
  • Serve hot with phulkas,parathas or spread it over toast.
