Panchmel Dal | Panchratna Dal

Ingredients

  • 1 cup of mixed dal (tur dal, masoor dal, chana dal, moong dal and udad dal)
  • 1 ½ tsp turmeric powder
  • 1 tbsp ghee
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tbsp ginger garlic paste
  • 3 to 4 green chillies, finely chopped
  • 2 dry red chillies
  • 1 large onion, finely chopped
  • ½ tsp asafoetida (hing)
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp dried fenugreek leaves (kasuri methi)
  • 1 tsp garam masala
  • salt to taste

Instructions

  • Take a cup of mixed dal ( mixture of tur dal, masoor dal,chana dal, moong dal and udad dal).
  • Wash and soak for minimum 1 hour.
  • After an hour, drain the water and transfer the soaked dal to a pressure cooker.
  • Add ½ tsp turmeric powder, salt and 2 cups of water. Close the lid and pressure cook for5 to 6 whistles.
  • Open the pressure cooker once it cools completely. Keep cooked dal aside.
  • Heat ghee in a pan.  Add mustard seeds and cumin seeds.
  • When the seeds start crackling, add ginger garlic paste, chopped green chillies, dry red chillies, chopped onion, asafoetida and saute.
  • Saute till the onions turn translucent.
  • Add chopped tomato and saute till the tomato turns mushy.
  • Add cooked dal. Add water as required and mix well.
  • Add turmeric powder red chilli powder, coriander powder and mix. 
  • Add salt as per taste.
  • Add kasoori methi and garam masala.
  • Cook for 2 minutes on low heat.
  • Serve Panchmel dal with steamed rice or jeera rice.
