Sprouted Jowar Pulao

Ingredients

  • 1 cup jowar (sorghum)
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 3 to 4 cloves
  • 1 tbsp ginger garlic green chilly paste
  • 1 medium sized onion, chopped
  • 1 tomato, chopped
  • 1 carrot, chopped
  • ½ cup fresh peas
  • ½ tsp turmeric powder
  • 1 tsp red chilly powder
  • ½ tsp cumin corainader powder
  • 1 tsp garam masala
  • salt as per taste
  • 2 tbsp chopped coriander leaves

Instructions

  • Wash and soak jowar for 10 to 12  hours. 
  • After 12 hrs, drain the water .
  • Place the jowar in a strainer. Keep it on a small bowl. Cover it and keep aside for 12 hours to sprout.
  • Transfer the  sprouted jowar to a pressure cooker.
  • Add  2 cups of water, salt and cook for 8 to 10 whistles.   Keep cooked jowar aside.
  • Heat oil in a pan.
  • Add cumin seeds, bay leaf and cloves. Saute for few seconds.
  • Add ginger garlic chilly chilly paste and saute.
  • Add chopped onion and saute.
  • Add chopped tomato and saute.
  • Add chopped carrot and fresh peas. Add ¼ cup water and cover the pan.  Cook on low heat till the veggies turn tender. 
  • Add turmeric powder, red chilly powder, cumin coriander powder and garam masala.  Mix well.
  • Add cooked jowar and mix well. Add salt if required. 
  • Cover and cook for 2 minutes. 
  • Garnish with chopped coriander leaves.   Serve Jowar Pulao with raita.
