Sweet Potato Salad

Ingredients

  • 200 grams sweet potato
  • ¼ cup green capsicum, chopped
  • ¼ cup red capsicum, chopped
  • ¼ cup yellow capsicum, chopped
  • ¼ cup grated carrots
  • ¼ cup sweet corn 

Salad Dressing

  • 1/4 cup peanuts
  • 1 small green chilly
  • a small piece of jaggery
  • salt to taste
  • 1 tbsp lemon juice
  • 1/3 cup water

Instructions

  • Wash the sweet potato and cut into small cubes.
  • Steam the sweet potatoes and keep aside.
  • To make the salad dressing, heat a pan and dry roast peanuts till they turn crunchy.
  • Transfer roasted peanuts to a mixer jar. Add green chilly, salt, jaggery, lemon juice and water. Blend to a fine paste.
  • In a bowl, add steamed and cooled sweet potatoes, chopped green, yellow and red capsicum, grated carots and sweet corn.
  • Pour the salad dressing and toss everything together.
  • Garnish with chopped coriander leaves and roasted sesame seeds.
