Tomato Khajur Chutney | Bengali Tomato Dates Chutney

Ingredients

  • 4 large ripe tomatoes
  • 1 tbsp mustard oil
  • 1 tsp panch phoron ( a mix of cumin seeds, mustard seeds, fenugreek seeds, fennel seeds and nigella seeds)
  • 2 dry red chillies
  • 1 tsp chopped ginger
  • salt to taste
  • 2 tbsp jaggery powder
  • 2 tbsp raisins
  • 6 to 7 dates

Instructions

  • Wash and chop the tomatoes.
  • Deseed and chop the dates.
  • Heat oil in a pan.
  • Add panch phoron. Saute for few seconds.
  • Add chopped dry chillies and saute.
  • Add chopped ginger and saute.
  • Add chopped tomatoes and salt. Saute on low heat for few minutes. Cover and cook till the tomatoes turn mushy.
  • Add jaggery powder and mix well till the jaggery dissolves.
  • Add raisins and chopped dates. Mix well.
  • Cover and cook on low heat for 2 minutes.
  • Allow it to cool and transfer to a glass jar. This can be stored upto 2 weeks in the refrigerator
