Wash and chop the tomatoes.
Deseed and chop the dates.
Heat oil in a pan.
Add panch phoron. Saute for few seconds.
Add chopped dry chillies and saute.
Add chopped ginger and saute.
Add chopped tomatoes and salt. Saute on low heat for few minutes. Cover and cook till the tomatoes turn mushy.
Add jaggery powder and mix well till the jaggery dissolves.
Add raisins and chopped dates. Mix well.
Cover and cook on low heat for 2 minutes.
Allow it to cool and transfer to a glass jar. This can be stored upto 2 weeks in the refrigerator
