Drumstick Stir-Fry

A simple and flavorful Maharashtrian-style stir fry madewith drumsticks, spices, tamarind, and jaggery.

Ingredients

  • 3 drumsticks
  • 1 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • a pinch of asafoetida
  • 1 medium sized onion, chopped
  • 3 to 4 cloves of garlic, chopped
  • ½ tsp turmeric powder
  • 1 tbsp red chilli powder
  • 1 tsp Goda masala
  • salt to taste
  • 2 tbsp tamarind pulp
  • a small piece of jaggery

For Garnishing

  • freshly grated coconut
  • chopped coriander leaves

Instructions

  • Peel and chop the drumsticks into 2-inch pieces. Wash and set aside.
  • Heat oil in a pan. Add mustard seeds and let them splutter.
  • Add cumin seeds and asafoetida.  
  • Add chopped garlic and sauté for a few seconds.
  • Then add chopped onions and cook till they turn soft and translucent.
  •  Mix in turmeric powder, red chilli powder, and Goda masala. Sauté for a few seconds to bring out the aroma.
  • Add the chopped drumsticks, tamarind pulp, and about ¾ cup water. Mix well.  
  • Cover the pan and cook on a low flame,stirring occasionally. Add more water if needed.
  • Once the drumsticks are almost done, add jaggery and mix. Cover and cook until fully cooked and tender.
  • Turn off the flame. Garnish with freshly grated coconut and chopped coriander leaves.
  • Serve hot with dal rice ,
