One such dish is Shevga Fry — a humble stir fry made with drumsticks, also known as moringa pods. In Maharashtrian homes, this bhaji is often served alongside dal rice or varan bhaat — making for a wholesome, satisfying meal.

The beauty of this dish lies in its simplicity: a handful of ingredients, a tempering of spices, a hint of tamarind and jaggery for that gentle sweet-tangy balance, and a generous sprinkle of coconut and coriander to bring it all together.

Step-wise recipe with pictures

Peel and chop the drumsticks into 2-inch pieces.

Wash and set aside.

 Heat oil in a pan. Add mustard seeds and let them splutter. Add cumin seeds and asafoetida.  Add chopped garlic and sauté for a few seconds.

 Then add chopped onions and cook till they turn soft and translucent.  

Mix in turmeric powder, red chilli powder, and Goda masala. Sauté for a few seconds to bring out the aroma.

Add the chopped drumsticks, tamarind pulp, and about ¾ cup water. Mix well.   Cover the pan and cook on a low flame, stirring occasionally. Add more water if needed.

Once the drumsticks are almost done, add jaggery and mix.

Cover and cook until fully cooked and tender. Turn off the flame. Garnish with freshly grated coconut and chopped coriander leaves. Serve hot with dal rice .

Ingredients

  • 3 drumsticks
  • 1 tbsp oil
