Horsegram (Kulthi in Hindi, Kulith in Marathi, Kudu in Tulu) is known to be the most protein rich lentil, but a highly ignored one. Horsegram, a superfood in its own right is the richest source of protein for vegetarians. Horsegram Chutney is a healthy, tasty chutney and pairs well with plain rice porridge/kanji. It can also be served with idli or dosa. I am sharing my mom’s recipe of Horsegram Chutney. Here goes the recipe:
Ingredients
1 cup horsegram (kulith/kulthi)
½ tsp oil (tel)
½ cup fresh coconut, grated (nariyal)
½ cup fresh coriander leaves (dhaniya)
2 to 3 dry red chillies (laal mirch)
3 cloves of garlic (lehsun)
A marble sized ball of tamarind (imli)
Salt as per taste (namak)
For tempering
1 tbsp oil (tel)
1 tsp mustard seeds (rai/ sarson)
½ tsp asafoetida (hing)
Few curry leaves (kadi patta)
Method:
- Heat a pan and dry roast horsegram till it turns dark brown in colour and gives out an aroma.
- Remove and keep it aside.
- Heat ½ tsp oil and roast the dry red chillies.
- Transfer the roasted horsegram and roasted chillies to a mixer jar.
- Add coconut, coriander leaves, garlic, tamarind and salt to it. Add around 1 cup of water and blend to a semi-coarse paste.
- For the tempering, heat 1 tbsp oil in a small pan.
- Add mustard seeds, asafoetida and curry leaves.
- When the seeds start crackling, pour the tempering over the chutney.
- Serve with hot rice porridge/kanji.
Note: If serving with idli/dosa, you will need to add more water while grinding and make the chutney with thin consistency.
