Matar Gujiyas or Matar Karanji is a flavourful snack which makes for a great tea time snack and can also be served as starters at parties or festive ocassions. Â Today, on the occasion of Holi, admidst the sweet treats like puranpoli and shrikhand, I wanted to make a savoury dish. So, here is this delicious, fried savoury dish made with a stuffing of green peas. This is a must try dish, when fresh green peas are available in plenty. Here goes the recipe for Matar Gujiyas:
Ingredients
For the outer covering
1 cup refined flour (maida)
2 tbsp semolina (rava/sooji)
1 tbsp clarified butter (ghee)
Salt as per taste (namak)
For the stuffing
2 cups green peas (matar)
1 tsp oil (tel)
1 tsp cumin seeds (jeera)
1 tsp fennel seeds (sauf)
½ tsp asafoetida (hing)
2 tsp ginger, green chilly paste (adrak, hari mirch paste)
3 tbsp fresh grated coconut (nariyal)
½ cup chopped fresh coriander leaves (hara dhaniya)
2 tbsp lemon juice (nimbu ka ras)
Salt as per taste (namak)
Oil for frying gujiyas
Method
- In a mixing bowl, add maida, rava, ghee and salt.
- Add water, as required and knead well into a soft dough.
- Keep this aside for 20 minutes.
- Boil the green peas.
- Mash them with the help of a masher and keep aside.
- Heat 1 tsp oil in a pan.
- Add cumin seeds, fennel seeds and asafoetida.
- Saute for few seconds.
- Add boiled and mashed green peas and saute.
- Add ginger-green chilly paste, salt and mix well.
- Next, add grated coconut, chopped coriander leaves and mix well.
- Turn off the heat and add lemon juice.
- Give a quick mix.
- Keep this stuffing aside.
- Now, divide the dough into small round shaped balls.
- Roll out one dough ball into a circle of around 4 to 5Â inches diameter.
- Place 2 tbsp of the stuffing in the centre of the circle and fold the circle in a semi circular shape.
- Gently press the edges and pinch the pressed edges.Â
- Make all gujiyas in this manner and deep fry them.
- Serve hot.
