Dry fruits kesar shrikhand

Dry fruits Kesar Shrikhand is a Maharashtrian dessert made with hung curd, powdered sugar flavoured with nuts, saffron and cardamom. For Maharashtrians, it is a must have dessert for most of the festivals. Now, make this yummy dessert at home and serve with hot puris.

About Shrikhand

Shrikhand is an Indian dessert which is popular in Maharashtra and Gujarat. This is an easy, no-cook dessert which comes together in 10 minutes if you have hung curds readily available. Shrikhand is generally served with pooris but tastes great by itself too. In Maharashtra, it is a commonly made desserts for festivals like Gudi Padva and Ganesh Chaturthi.

Shrikhand can be made in many different flavours. Some other variety of shrikhand on this blog are kesar shrikhand, dry fruits shrikhand, mango shrikhand, strawberry shrikhand and  sugar free shrikhand.

List of ingredients to make dry fruits kesar Shrikhand

Fresh Curds

Milk

Powdered sugar

Dry fruits  : pistachio, almonds, raisins

Flavouring ingredients : cardamom powder,saffron

How to make Dry fruits Shrikhand

Place a muslin cloth on a strainer. Add curds. Bring the ends of the muslin cloth together and tie it. Place the strainer on a large bowl so that the whey gets collected in the bowl. Keep this in the refrigerator for 6 to 7 hours or overnight.

Soak saffron in warm milk and keep aside for 30 minutes to 1 hour.

Transfer the hung curds to a mixing bowl.

Add powdered sugar and saffron milk. Mix well using a whisk or a hand blender.

Add cardamom powder, chopped nuts and mix well.

Garnish with chopped nuts and dried rose petals.

Refrigerate and serve chilled.

Ingredients

  • 500 grams Fresh Curds                               
  • 1/2 cup Powdered sugar
  • 2 tbsp Chopped Pistachio                         
  •  2 tbsp Chopped Almonds                       
  • 1 tbsp Raisins (optional)                                         
  • 1/4 tsp Cardamom powder                                   
  • a big pinch Saffron (Kesar)                               
  • 1 tbsp Warm milk 

Instructions

  • Place a muslin cloth on a strainer. Add curds. Bring the endsof the muslin cloth together and tie it. Place the strainer on a large bowl sothat the whey gets collected in the bowl. Keep this in the refrigerator for 6 to 7 hours or overnight.
  • Soak saffron in warm milk. Keep this aside.
  • Transfer the hung curds to a mixing bowl, add powdered sugar and mix well until the sugar dissolves using a whisk or a hand blender.
  •  Now add the saffron soaked in milk and cardamom powder and mix well.
  •  Finally add the chopped dryfruits (almonds, pistachios and raisins) and mix well.
  •  Refrigerate and serve dry fruits kesar shrikhand  with puris.
