Amaranth Chivda – healthy snack made using puffed amaranth (rajgira).

Amaranth or Rajgira are tiny gluten free seeds, rich in protein, calcium and are hailed as the superfood in recent times. Amaranth or Rajgira seeds and flour  is popular as fasting food in Maharashtra and Gujarat. It is used to make khichdi, chikki, laddoo, puri, thalipeeth, khandvi etc.  While these are the traditional methods of eating amaranth, the seeds and flour are now used to make granola, breakfast porridge, cookies, muffins etc. While Amaranth seeds and flour are undoubtedly healthy, Amaranth leaves are loaded with nutrients and are used to make sabzis and curries. About Amaranth Chivda

Amaranth Chivda or Rajgira Chivda is a healthy snack made using puffed amaranth, nuts and spices.  This chivda is made with  minimum oil. I have used only 1 tablespoon of oil to make this chivda. This chivda is not only tasty, but is nutritious too.  This is a fasting dish and hence is made with minimum spices. Amaranth Chivda makes for a healthy snack and can be consumed during non-fasting days too. If you are making this for non-fasting days, you can also add sesame seeds, roasted chana dal, turmeric powder and red chilli powder to this chivda.  

It can be served as mid-morning snack or as a tea-time snack. Navratri is around the corner and this recipe is perfect for those observing fasts during Navratri. So, if you are observing Navratri fast, do try this recipe and leave your feedback in the comments section below.

List of ingredients to make Amaranth Chivda

Grains : Puffed Amaranth
Nuts : Peanuts, Cashew nuts and Almonds
Spices and herbs : green chillies, curry leaves, black pepper powder
Other ingredients : oil, rock-salt (sendha namak) and powdered sugar

Step-wise recipe with pictures

Heat a pan and add peanuts.

 

Dry roast the peanuts till it turns crunchy. Remove and keep aside.

Add chopped almonds and dry roast till the almonds turn crunchy. Keep aside.

Add chopped cashew nuts and dry roast. Keep aside.

Heat 1 tbsp oil in a pan. Add cumin seeds, curry leaves, chopped green chillies and chopped dry coconut.

Saute for few seconds till coconut pieces are well roasted.

 

Add puffed amaranth and mix.

Add sendha namak (rock salt), powdered sugar and black pepper powder. Mix well.

Add roasted nuts and mix well.

Allow it to cool and atore in an airtight container and serve as required.  It stays fresh for several weeks.

Notes:

I have used puffed amaranth seeds. You can use raw amaranth seeds for this recipe for which you will need to roast the seeds and puff the seeds.

Raisins can also be added to this chivda.If you want to make this chivda for non-fasting days, you can even add sesame seeds, roasted chana dal, turmeric powder and red chilly powder to this chivda.

Ingredients

  • 2 cups of puffed Amaranth/Rajgira
  • ¼ cup raw peanuts
  • 10 almonds, chopped
  • 10 cashew nuts, chopped

  • 1 tsp cumin seeds
  • few curry leaves
  • 2 green chillies, chopped
  • sendha namak (rock salt) as per taste
  • 1 tsp powdered sugar
  • a pinch of black pepper powder

Notes
