Spicy Corn on Crackers is a quick snack which can be enjoyed anytime. It makes for a good tea time snack. Cracker biscuits are topped with a spicy mixture of sweet corn and veggies. The corn mixture also makes for a good topping for nachos, chips and toast. Â Here’s the recipe:
Ingredients
10 cracker biscuits
a cup of boiled sweet corn
1 small onion, finely chopped
½ cup chopped capsicum
1 green chilly, chopped
a tsp of oil
1 tsp chilly flakes
½ tsp oregano
Salt as per taste
1 tbsp tomato sauce
½ cup of grated cheese

Method
- Â Heat oil in a pan.
- Add chopped onions.
- Saute for few seconds.
- Add chopped capsicum and green chillies.
- Saute for few seconds.
- Add boiled sweet corn, chilly flakes, oregano and salt.
- Mix everything.
- Add tomato sauce and mix.
- Keep this aside.
- Spread the cracker biscuits on a plate.
- Place 1 tbsp of sweet corn topping on each cracker.
- Top each cracker with grated cheese.
- Microwave the crackers for 20 seconds (till the cheese melts).
- Remove from the microwave and serve hot.
