How to make Falafel

Falafel is a deep fried patty made from ground kabuli chana (white chickpeas) and certain vegetables like carrots, cabbage, capsicum etc. In the Middle East, it is a popular snack. It is commonly served in a pita bread, topped with salads and sauce.

Ingredients

5 Pita bread

For the patties
1 cup kabuli chana (white chickpeas)

2 green  chillies (chopped)
½ cup mint leaves (chopped)
2 cloves  garlic (grated)
½ cup grated carrot
½ cup grated cabbage
¼ cup finely chopped capsicum
1 tsp jeera powder (cumin powder)
Salt as per taste

For the Sauce
6 tbsps fresh thick curds

2 cloves garlic chopped
¼ cup spring onion including greens (chopped)
¼ tsp sugar
A pinch of salt

For the salad
2 tomatoes (thinly sliced)

1 cup shredded lettuce

Method

For the Sauce

  • Blend curds, garlic, spring onion, sugar and salt in a mixer to a smooth sauce. Refrigerate the sauce.

For the patties

  • Soak the kabuli chana in water for 5  hours.
  • Combine the soaked kabuli chana, green chillies, mint leaves and grind to a coarse paste without using water.
  • To the ground mixture, add grated carrot, grated cabbage, grated garlic, chopped capsicum, cumin powder, salt and mix well.
  • Take small portion of the mixture and make round flat patty.
  • Repeat with the remaining mixture.
  • Deep fry the patties till golden brown in colour.
  • Keep falafel aside.

How to proceed

  • Heat a pan and warm the pita bread halves.
  • Fill each pita bread half with some tomato slices, shredded lettuce, one patty and a spoonful of the refrigerated sauce.
  • Serve immediately.
