About Horsegram Podi
Horsegram Podi is a nutritious twist to the traditional Milagai Podi, also known as gunpowder, which is a popular South Indian spice mix. By incorporating horsegram into the classic recipe, this podi becomes a healthy and flavorful condiment that pairs well with various dishes such as idli, dosa, steamed rice, and curd rice. This versatile podi not only enhances the taste of meals but also boosts their nutritional value, making it a perfect addition to any meal.
Step-wise recipe with pictures
Heat a pan. Add chana dal, udad dal, sesame seeds and horsegram.
Saute on low heat till the lentils turn aromatic.
Next, heat oil in a pan Add dry red chilies and curry leaves. Sauté until the chilies and curry leaves turn crisp.
Transfer all the roasted ingredients to a blender alongwith salt and asafoetida.
Grind them into a semi-coarse powder. Store it in an airtight container and use it as needed.
How to use Horsegram Podi
Method 1
Sprinkle horsegram podi over idlis, drizzle with some warm ghee, and serve.
Method 2
Heat ghee in a pan, add mustard seeds, urad dal, curry leaves, and the podi. Sauté for a few seconds, then add idlis and toss until they’re well coated with the podi.
Other ways to use horsegram podi
Mix this podi with curd rice and serve.

Ingredients
- ¾ cup horsegram
- 1/3 cup udad dal
- 1/3 cup chana dal
- ¼ cup sesame seeds
- 1 tsp oil
- 10 to 12 dry red chillies ( a mix of Byadgi & Pandi chillies)
- 3 sprigs of curry leaves
- ½ tsp asafoetida (hing)
- 1 tsp salt
Instructions
- Heat a pan. Add chana dal, udad dal, sesame seeds and horsegram. Saute on low heat till the lentils turn aromatic.
- Next, heat oil ina pan Add dry red chilies and curry leaves. Sauté until the chilies and curry leaves turn crisp.
- Transfer all the roasted ingredients to a blender and grind them into a semi-coarse powder.
- Store it in an airtight container and use it asneeded.
Hos to use horsegram podi
- 1. Sprinkle horsegram podi over idlis. Drizzle warm ghee over it and serve
- 2. Heat ghee in a pan. Add mustard seeds, udsd dal,curry leaves and horsegram podi. Saute for few seconds. Add idlis and coat wel lwith podi.
- 3. Mix podi with curd rice and serve.
- 4. Mix podi with steamed rice and drixxle ghee over it.
