Pineapple Rava Kesari

Rava Sheera is one of the easiest and quickest Indian desserts to prepare.  This delicious dessert is prepared with few basic ingredients which are easily available in every Indian household. Sheera is made in a number of ways and is known by different names. From North India’s Sooji ka halwa to Southern India’s Rava Kesari, it is the same dish with minor variations. Rava Kesari is a popular dessert in South India and is prepared for festive and auspicious occasions. Rava Kesari is same as Rava Sheera but is orange in colour due to saffron or orange colour added to it. Pineapple Rava Kesari or Pineapple Sheera is one such variation, where pineapple chunks are added to the regular Rava Kesari.  Here is the recipe:

Ingredients

½ cup semolina (rava/sooji)
½ cup finely chopped pineapple (ananas)
3 tbsp clarified butter (ghee)
1/3 cup sugar (cheeni)
7 to 8 cashew nuts (kaju)
7 to 8 almonds and some almond slivers (badam)
2 tbsp raisins (kishmish)
A pinch of saffron (kesar)
½ tsp cardamom powder (elaichi powder)

Pineapple Rava Kesari

Method

  • Firstly, soak a pinch of saffron in 2 tbsp water in a bowl and keep aside for 30 minutes.  
  • Heat a pan and add 2 tbsp ghee.
  • Add cashew nuts, almonds/almond slivers and saute for few seconds.
  • Remove and keep aside.
  • Now, add raisins and roast for few seconds.
  • Remove and keep aside.
  • In to the same pan, add rava and roast on a low flame.
  • Keep stirring till the rava  turns aromatic.
  • Remove roasted rava from the pan, transfer to a bowl and keep aside.  
  • Add another tablespoon ghee to the same pan.
  • When the ghee starts melting, add chopped pineapple.
  • Saute pineapple pieces for few seconds.
  • Add a cup of water and cook covered till the water comes to a brisk boil.
  • Uncover the pan, reduce the heat and gradually add the roasted rava while stirring continuously.
  • Add sugar and mix well.
  • Now, add the saffron mixture and give a good mix. 
  • Cover the pan and cook for 5 minutes. 
  • After 5 minutes, open the lid, give a mix and add roasted dry fruits and cardamom powder. Mix well. 
  • Pineapple Kesari / Pineapple Sheera is ready to be served.
