Barnyard Millet Pesarattu  is a twist on the traditional Andhra Pesarattu, which is typically made from green gram (moong dal) and rice. By substituting rice with barnyard millet, this recipe becomes a wholesome, gluten-free, and fiber-rich alternative.

Barnyard millet pesarattu is an ideal dish to start your day with or even enjoy as a light dinner. Packed with nutrition and bursting with flavours, it is a great way to incorporate millets into your meals.

In a bowl add whole green gram and barnyard millet.

Add water and rinse it a few times.  Drain the water. Add water and keep it soaked for 7 to 8 hours or overnight. 

Once soaked, drain the water, transfer the soaked ingredients to a mixer jar. Add green chillies, ginger, salt and a little water.

 Blend to a fine paste.  Check the salt. Add more salt if required. Add more water if required to adjust the consistency.

  Heat a dosa pan. Grease it lightly. Pour a ladleful batter on the pan and spread to make a thin dosa.

Sprinkle chopped onion and chopped coriander leaves.

Drizzle ghee over the dosa and cook till it turns golden and crispy. Serve hot with coconut chutney.

Ingredients

  • ½ cup barnyard millet (varai/ bhagar/ samak)
  • 3 green chillies
  • a small piece of ginger
  • salt to taste
  • Ghee or oil for  cooking dosas
