Kothimbir Vadi

Kothimbir Vadi is a famous traditional  Maharashtrian snack made with coriander leaves and gram flour. Kothmir Vadi can be served with any chutney as a snack, but is also great as a side dish with meals.

Ingredients

3 cups Coriander (chopped)
1 1/2 cup  Besan (gram flour)
1/2 tsp  turmeric powder
1 tsp red chilly powder
1 tbsp green chillies, finely chopped
1 tbsp cumin-coriander powder (dhaniya jeera powder)
1 tsp garam masala
1 tbsp oil
1/4 cup water
Salt as per taste
Oil for frying the vadis

Method

  • In a mixing bowl, add besan, chopped coriander, turmeric powder, chilly powder, green chilly paste, cumin-coriander powder, garam masala, 1 tbsp oil, salt, water and mix well.
  • Spread the mixture on a greased thali and place it in a vessel/steamer in which some water is already boiling.
  • Cover it and steam for 10 minutes.
  • To check if it is cooked properly, poke a knife. If it comes out clean, it means kothimbir  vadi is cooked properly.
  • Once it cools, cut into square pieces.
  • Heat oil in a pan and deep fry the vadis.
  • Kothimbir vadis are ready to be served.
