Basale Kudu Saar

Basale Kudu Saar is a wholesome Mangalorean curry made with Malabar spinach and horsegram.

Some recipes instantly bring back memories of simple home-cooked meals, family lunches, and traditional coastal flavours. Basale Kudu Saar is one such comforting dish from the Mangalorean cuisine that beautifully combines the goodness of Malabar spinach (Basale) and horsegram (Kudu).

Basale Kudu Saar is wholesome, nutritious, and packed with flavour. The roasted and coarsely crushed horsegram gives the curry a lovely earthy texture, while the coconut-based masala adds richness and depth. Served with hot rice, it makes for a comforting and satisfying meal.

I have used the Mangalorean curry powder  for this recipe. It makes the cooking process easier and quicker while still giving the curry its authentic traditional flavour. Serve Basale Kudu Saar hot with steamed rice for a simple, nourishing, and comforting meal.

Ingredients

  • 1 bunch Malabar spinach (Basale)
  • 1/3 cup horsegram  (kudu)
  • 1 small tomato
  • ½ cup freshly grated coconut
  • 2½ tbsp Mangalorean curry powder
  • 1 small onion, chopped
  • 2–3 cloves garlic
  • a marble-sized ball of tamarind
  • ½ tsp turmeric powder
  • Salt to taste

For tempering

  • 2 crushed garlic cloves
  • 1 tsp mustard seeds
  • Few curry leaves
  • 1 dry red chilly

Instructions

  • Chop the Malabar spinach and pressure cook it with tomato, water, and salt for 4–5 whistles.
  • Dry roast the horsegram on low heat until aromatic.
  • Cool slightly and crush coarsely using a mortar and pestle. Do not grind it too fine — the texture should remain coarse.
  • Grind coconut, Mangalorean curry powder, onion, garlic, tamarind, and turmeric powder into a smooth paste.
  • Add the crushed horsegram to the cooked basale and simmer for 5 minutes on low heat.
  • Add the prepared masala paste and cook again for 5–7 minutes.
  • Heat oil in a pan and add mustard seeds.
  • Once they splutter,add crushed garlic, curry leaves, and dry red chilli. Pour this tempering overthe curry.
  • Basale Kudu Saar is ready to serve
