Malpuri

Malpua – a delicious deep fried dessert.

Its festival time. With barely a few days left for Dussehra and soon to follow Diwali, everyone is gearing up for the celebration. And what’s a festival without sweets. Even though people have now become health conscious, sweets are something one cannot ignore during festivals.

Today, I am sharing the recipe of a sweet dish known as Malpua.  Malpua can be made in a  number of ways. The ingredients for the Malpua batter varies from region to region. There are several variations, using some or all of the following ingredients : maida, rava, wheat flour, milk, yoghurt etc.  I am here with an easy recipe of Malpua which I learnt from Mrs. Jyoti Baliga who is a member of one of the Facebook food groups. Here goes the recipe:

Malpua

Ingredients

1 cup refined flour (maida)
¼ cup semolina (rava)
1 cup buttermilk (chaas)
½ cup sugar (cheeni)
1 tsp cardamom powder (elaichi powder)
Clarified butter (Ghee) for frying Malpuas

Method

  • In a mixing bowl, add maida, rava, sugar, buttermilk and whisk well till the sugar is dissolved.
  • Keep this aside for 2 hours.
  • After two hours, add elaichi powder to the mixture and mix.
  • Heat ghee in a pan.
  • Pour a small ladleful of batter into hot ghee.
  • Let it fry on a slow flame.
  • Flip and fry on the other side as well.
  • Malpuas should be evenly fried on both sides.
  • Likewise, repeat with the remaining batter.
  • Remove and serve hot with chilled rabdi.
