Kerala Chicken curry

Kerala style Chicken Curry is a spicy, flavourful curry from Kerala cuisine. It goes well with rice, appam, roti etc.  The use of coconut oil and spices gives it an unique flavour.  Try this traditional chicken curry from the God’s own country. It tastes best with Kerala Appam.

Ingredients

½ kg Chicken

To Marinate chicken

2 tsp red chilly powder
1 tsp turmeric powder
1 tbsp lemon juice
Salt as per taste

Other ingredients

2 tsp coriander seeds
1 tsp cumin seeds
8 to 10 black pepper
5 to 6 cloves
1 inch cinnamon
1 big cardamom
1 bay leaf
2 tsp fennel seeds
5 to 6 dry red chillies
3 tbsp coconut oil
4 onions (chopped)
1 tomato (chopped)
A few curry leaves
2 tsp ginger garlic paste
1 cup coconut milk
Salt as per taste

Method

  • Marinate chicken with chilly powder, turmeric powder, salt and lemon juice and set aside for atleast an hour.
  • Dry roast coriander seeds, cumin seeds, black pepper, cloves, cinnamon, big cardamom, bay leaf, fennel seeds and red chillies. 
  • Grind these spices with little water to a smooth paste.
  • Heat coconut oil in a pan.
  • Add curry leaves, chopped onions and saute till it turns golden brown.
  • Add ginger-garlic paste and saute. 
  • Add chopped tomatoes and cook till it becomes soft. 
  • Add the ground masala and cook.
  • Now, add the marinated chicken and cook for 8 to 10 minutes.
  • Add salt and coconut milk.
  • Cook for another 5 to 10 minutes.
  • Serve hot with appam or roti or rice.
