Thoran , a classic recipe from Kerala is a stir-fried dish made with finely chopped vegetables cooked with coconut, spices, and curry leaves. Thoran is a staple in Kerala cuisine and is commonly served as a side dish with rice, especially in traditional meals known as Sadhya.
About Mixed Veg Thoran
Mixed Veg Thoran is a mixture of various vegetables stir fried with coconut and minimum spices. It can be made with an array of vegetables. I have used French beans, carrot and cabbage. The veggies are cooked to a perfect tender-crisp texture retaining their natural flavour. Thoran is easy to prepare and gets made quickly.
It is served as a side-dish in traditional Kerala meals. It pairs well with other South Indian staples like sambar, rasam, and yogurt-based curries. It is an integral part of Onam Sadhya.
Step-wise recipe with instructions
Heat oil in a pan/clay pot. Add mustard seeds, curry leaves, chopped garlic, chopped green chillies and saute.
Add chopped onion and saute for few seconds.
Add chopped French beans.
Add chopped carrots.
Finally, add chopped cabbage.
Add salt , turmeric powder, ¼ cup water and mix well.
Cover and cook on low heat for 7 to 10 minutes.
Add fresh coconut and mix. Cover the pan and let it cook for few seconds.
Serve hot.

- 1 tsp mustard seeds
- few curry leaves
- 2 cloves garlic, chopped
- 3 green chillies, chopped
- 1 onion, sliced
- 1 cup chopped French beans
- 1 cup chopped carrots
- 1 cup chopped cabbage
- salt to taste
- ½ tsp turmeric powder
- ½ cup freshly grated coconut
Instructions
