Thoran , a classic recipe from Kerala is a stir-fried dish made with finely chopped vegetables cooked with coconut, spices, and curry leaves. Thoran is a staple in Kerala cuisine and is commonly served as a side dish with rice, especially in traditional meals known as Sadhya.
About Mixed Veg Thoran
Mixed Veg Thoran is a mixture of various vegetables stir fried with coconut and minimum spices. It can be made with an array of vegetables. I have used French beans, carrot and cabbage. The veggies are cooked to a perfect tender-crisp texture retaining their natural flavour. Thoran is easy to prepare and gets made quickly.
It is served as a side-dish in traditional Kerala meals. It pairs well with other South Indian staples like sambar, rasam, and yogurt-based curries. It is an integral part of Onam Sadhya.

Step-wise recipe with instructions
Heat oil in a pan/clay pot. Add mustard seeds, curry leaves, chopped garlic, chopped green chillies and saute.

Add chopped onion and saute for few seconds.

Add salt , turmeric powder, ¼ cup water and mix well.

Cover and cook on low heat for 7 to 10 minutes.

Add fresh coconut and mix. Cover the pan and let it cook for few seconds.

Ingredients
- 1 tbsp oil
- 1 tsp mustard seeds
- few curry leaves
- 2 cloves garlic, chopped
- 3 green chillies, chopped
- 1 onion, sliced
- 1 cup chopped French beans
- 1 cup chopped carrots
- 1 cup chopped cabbage
- salt to taste
- ½ tsp turmeric powder
- ½ cup freshly grated coconut
Instructions
- Heat oil in a pan/clay pot.
- Add mustard seeds, curry leaves,chopped garlic, chopped green chillies and saute.
- Add chopped onion and saute for few seconds.
- Add chopped French beans,chopped carrots and chopped cabbage.
- Add salt , turmeric powder, ¼ cup water and mix well.
- Cover and cook on low heat for 7 to 10 minutes.
- Add fresh coconut and mix.
- Cover the pan and let it cook for few seconds. Serve hot
