Tri-coloured Rice is made by arranging three different coloured rice one over the another. The orange colour in this rice comes from tomato puree. Green colour comes from spinach puree and green peas. Not only is this dish tasty with three different flavours, but also appealing to the eyes.
 Ingredients
For the Orange Rice
1 cup cooked rice
1 tsp ghee
3 Â tomatoes
¼ cup chopped onions
Few curry leaves
1 tsp udad dal
½ tsp mustard seeds
1 tsp red chilly powder
½ tsp turmeric powder
Salt as per taste
For the White Rice
1 cup cooked rice
1 tsp ghee
3 to 4 cloves
2 bay leaves
1 inch cinnamon stick
1 tsp cumin seeds
¼ cup chopped onions
Salt as per taste
For the Green Rice
1 cup cooked rice
1 tsp ghee
2 cups chopped spinach leaves
1 to 2 green chillies
3 cloves garlic
1 tsp cumin seeds
¼ cup chopped onions
½ cup boiled green peas
Salt as per taste
Method
For the Orange Rice
- Chop the tomatoes.
- Blend the chopped tomatoes to a smooth paste.
- Heat a pan.Add ghee.
- Add mustard seeds, udad dal, curry leaves, onion and saute.
- Add tomato paste, turmeric powder, red chilly powder, salt and saute till the tomato is cooked well.
- Â Add the cooked rice and mix well.
- Keep this aside.
For the White Rice
- Heat ghee in a pan.
- Add the bay leaf, cloves, cinnamon stick, cumin seeds, onion and saute.
- When the onion starts changing colour, add the salt and the cooked rice.
- Mix it well and set this aside.
For the Green Rice
- Boil 2 cups of water in a pan.
- Add the chopped spinach leaves.
- After 2 minutes remove the blanched leaves and drop it into a bowl of cold water (This is done to retain the dark green colour of the spinach) .
- Combine the blanched spinach leaves, garlic, ginger, green chillies and blend to a fine paste.
- Heat ghee in a pan. Add cumin seeds and chopped onions.
- Saute till the onion starts changing colour.
- Add the spinach paste and saute.
- Add the boiled green peas and salt.
- Mix everything well.
- Add the cooked rice and mix.
- Keep this aside.
How to assemble all the layers
- Place a square mould on a serving plate.Â
- Spread the green rice evenly at the base of the bowl using the back of the spoon.
- Then spread the white rice evenly over the green layer.
- Finally, spread the orange rice evenly over the white layer and set it evenly using the back of the spoon.
- Remove the mould gently.Â
- Serve Tri-coloured rice with beetroot raita/Â pomegranate raita / boondi raita.
