Avial , a traditional Kerala delicacy is a colourful medley of vegetables. It is made with  a variety of vegetables that lend both colour and texture to the dish.

About Avial

Avial is a traditional South Indian dish made with wide range  of vegetables. It is an essential part of traditional feasts and celebrations such as Onam and Vishu. Some of the commonly used vegetables for Avial are yam, raw banana, drumstick, carrot, snake gourd, pumpkin, ash gourd and French beans. The vegetables are cooked in a coconut masala with minimum spices. It is served as part of Sadhya alongwith rice, sambar, papad and other accompaniments.

Vegetables : Yam, raw banana, drumstick, carrot, snake gourd, French beans and pumpkin

Other ingredients : Coconut, curry leaves, cumin seeds, green chillies, turmeric powder, salt, tamarind pulp and coconut oil

Step-wise instructions with pictures

Wash the vegetables.

Cut them into batons.

In a pot/pan (I have used a clay pot), add yam, carrot, drumstick, French beans, pumpkin, snake gourd and raw banana.

Add slit green chillies, curry leaves, turmeric powder, salt and 1 cup of water.

Cover and cook till the veggies turn tender.

In the meantime prepare the coconut masala by blending fresh coconut, cumin seeds, curry leaves and green chillies to a coarse mixture.

Once the veggies are almost cooked, add the coconut masala into the pot. Add 3 tbsp tamarind pulp.  Mix well. Cover and cook for a minute.

Turn off the heat. Add a tablespoon of oil. Cover the pot for few seconds allowing the coconut oil to infuse its flavour. Serve hot.

Ingredients

  • 100 grams yam
  • 100 grams drumsticks
  • 100 grams carrot
  • 100 grams pumpkin
  • 100 grams snake gourd
  • 100 grams French beans
  • 100 grams raw banana
  • few curry leaves
  • 3 green chillies, slit vertically
  • ½ tsp turmeric powder
  • 3 tbsp tamarind pulp
  • 1 tbsp coconut oil
  • salt to taste

Coconut Masala

  • 1 cup fresh coconut
  • ½ tsp cumin seeds
  • few curry leaves
  • 2 green chillies

Instructions

  • Wash the vegetables
  • Cut them into batons. Soak chopped banana in water to avoid it fom turning black.
  • In a pot/pan (I have used a clay pot), add yam, carrot,drumstick, French beans, pumpkin, snake gourd and raw banana.
  • Add 3 slit green chillies, curry leaves, turmeric powder, salt and 1 cup of water.
  • Cover and cook till the veggies turn tender.
  • In the meantime prepare the coconut masala by blending fresh coconut, cumin seeds, curry leaves and 2 green chillies to a coarse mixture.
  • Once the veggies are almost cooked, add the coconut masala into the pot.
  • Add 3 tbsp tamarind pulp.   Mix well.
  • Cover and cook for a minute
  • Turn off the heat. Add a tablespoon of oil. Cover the pot for few seconds allowing the coconut oil to infuse its flavour.
  • Serve hot.
