Ghee Roast Powder – a ready spice-mix to make ghee roast recipes.

Ghee Roast recipes are a huge favourite in my family, be it Chicken, Prawns, Paneer, Mushroom or Egg Ghee roast. Once a fortnight, I do make a ghee roast dish. Hence, it becomes very convenient to have a ghee roast powder readily available instead of making the ghee roast masala from scratch. With the ghee roast powder handy, it doesn’t take long to whip up a ghee roast dish.

Ghee Roast Powder is made by roasting and blending few handpicked spices. This powder has a good shelf life and can be stored at room temperature.

Ghee roast recipes are native to coastal Karnataka . It is one of the popular recipes of Mangalorean cuisine.  The recipe calls for cooking meat/seafood/ veggies in generous amount of ghee and spices. The masala for a ghee roast recipe requires roasting of red chillies, whole spices and then making a masala paste which can be time consuming. Hence, having ghee roast powder handy reduces the cooking time of ghee roast recipes.

List of ingredients to make Ghee Roast Powder

Kashmiri or Byadgi Chillies for the colour
Guntur or Pandi Chillies for spice
Coriander seeds
Fennel Seeds
Black Peppercorns
Fenugreek seeds (Methi)
Cloves
Cinnamon
Turmeric powder
Oil

Step-wise recipe to make Ghee Roast Powder

Heat ½ tsp oil in a pan. Add dry red chillies. Saute on low flame till the chillies turn crisp. Romove and keep aside.

Next, add coriander seeds, cumin seeds, fennel seeds, peppercorns, fenugreek seeds, cloves, cinnamon and  saute till they turn aromatic.

Allow all the roasted ingredients to cool down.

Transfer the roasted spices to a mixer jar and blend to a fine powder.

Add turmeric powder and mix well. Store in an airtight container

Storage

Store in an airtight container.

Ghee roast masala can be stored at room temperature upto 6 months.

Always use a dry spoon to remove the masala from the jar.

Ingredients

  • 15 Kashmiri or Byadgi Chillies
  • 25 Pandi or Guntur Chillies
  • ½ cup coriander seeds
  • 1 tbsp cumin seeds
  • 2 tsp fennel seeds
  • 2 tsp black peppercorns
  • 20 fenugreek seeds
  • 10 cloves
  • 1 inch cinnamon (dalchini)
  • 1 tsp turmeric powder (haldi)
  • ½ tsp oil

Instructions

  • Heat ½ tsp oil in a pan.
  • Add dry chillies.
  • Saute on low flame till the chillies turn crisp. Remove and keep aside.
  • Next,roast all the spices (except turmeric powder), one by one on low flame till they turn aromatic .
  • Allow the roasted spices to cool down.
  • Transfer theroasted spices to a mixer jar. Blend to a fine powder.
  • Add turmeric powder and mix well.
  • Store in an airtight jar and use as required.

Notes

Store in an airtight container.
