How to make Kottige using jackfruit leaves

Kottige/ Khotto / Gunda/ Hittu is idlis steamed in jackfruit leaves basket. Jackfruit leaves are joined together using tooth pick or coconut leaf sticks to make these baskets. These handmade, jackfruit leaves baskets are filled with idli batter and steamed.  This is a popular breakfast dish in the coastal region of Karnataka. For special occasions such as Janmashtami and Ganesh Chaturthi, idlis are steamed in these mini jackfruit leaves basket. These jackfruit leaves basket are known as Kottige or Gunda in Tulu , Khotto is Konkani and the other names are Hittu, Kotte Kadubu etc.

Here is how to make jackfruit leaves baskets

For making these baskets, we will need fairly big, equal sized leaves. Wash the leaves to remove any dirt or dust. Wipe them dry with a clean napkin.

Place two jackfruit leaves one over the other as shown in the picture below. With the help of a tooth pick join the leaves, by passing the tooth pick across the centre of the leaves.

Place two more leaves on either side of these leaves and join them with the help of tooth pick as shown below.

Now, join the sides of the leaves using tooth pick to form a basket. Ensure that there are no holes of gaps to avoid the batter from spilling out.

Repeat the same process to make more baskets.
