Prawns Ghee Roast – prawns cooked in a spicy masala and generous amount of ghee.
This Mangalorean style, spicy prawns dish can be served as an appetizer or as a side dish with dal-rice or biryani. It also tastes great with appams and neer dosa. Here goes the recipe for prawns ghee roast.
Ingredients
For marination
300 grams prawns (jhinga), washed and deveined
3 tbsp curds (dahi)
1 tsp turmeric powder (haldi)
1 tsp red chilly powder ( laal mirch powder)
1 tsp ginger garlic paste (adrak lehsun paste)
1 tbsp lemon juice (nimbu ka ras)
salt as per taste (namak)
Other ingredients
6 to 8 dry red chillies ( a mix of Kashmiri and byadgi chillies)
3 tbsp clarified butter (ghee)
2 tbsp coriander seeds (dhaniya)
½ tsp fennel seeds (sauf)
1 tsp cumin seeds (jeera)
8 to 10 black peppercorns (kali mirch)
3 to 4 fenugreek seeds (methi daana)
a small piece of cinnamon (dalchini)
2 to 3 cloves (laung/ lavang)
8 to 9 cloves of garlic (lehsun)
a lemon sized ball of tamarind (imli)
few curry leaves (kadi patta)
a pinch of sugar (cheeni)
salt as per taste (namak)
Method
- In a mixing bowl, add curds, red chilly powder, turmeric powder, ginger garlic paste, lemon juice, salt and mix well.
- To this mixture, add the prawns and mix well.
- Keep the marinated prawns aside for 30 minutes.
- Soak tamarind in water for 15 minutes.
- Heat ½ tsp ghee in a pan.
- Add red chillies and roast for 2 to 3 minutes on low flame.
- Remove and keep aside.
- Now, add coriander seeds, fennel seeds, cumin seeds, fenugreek seeds, cinnamon, black peppercorns and cloves.
- Roast the spices till they turn aromatic.
- Transfer the roasted spices to a mixer jar.
- Add garlic, tamarind (soaked in water) and blend the ingredients to a fine paste.
- Keep this masala paste aside.
- Heat ½ tsp ghee in a pan.
- Add the marinated prawns.
- Saute and cook for 5 to 8 minutes.
- When the prawns are almost cooked, take the pan off the heat and keep aside.
- Now, heat a pan. Add the remaining ghee to it.
- Add curry leaves and the masala paste.
- Saute the masala in ghee.
- Let the masala get fried well in ghee.
- When the masala starts leaving sides of the pan, add cooked prawns and mix well.
- Cook for another 5 minutes.
- Add a pinch of sugar and give a mix.
- Add salt if necessary, and mix well.
- Serve Prawns Ghee Roast with appam/ neer dosa.
Notes:
- After the prawns are added to the roasted masala, you can add water and cook for few minutes, if you want gravy like consistency.
- The quantity of chillies can be adjusted as per your taste.
