Egg stumbler is one of the popular street snacks of Mangalore.
I stumbled upon egg stumbler on a social media platform, couple of months back. I was intrigued by the name of the dish and did some research on it. To my surprise, it turned out to be a street snack from Mangalore. Egg stumbler is nothing but spiced scrambled eggs, to which bread cubes are added and garnished with coriander leaves. So, made this dish a couple of times at home and was instantly liked by my folks at home.
Egg stumbler is a quick, simple dish that can be served as breakfast, tea time snack or for dinner. With eggs and bread cubes in the dish, it makes for a complete meal by itself. This makes for a good lunch box option for kids. So, egg-lovers, this one is a must-try dish for you. With all the ingredients that are easily available in any Indian kitchen, egg stumbler can be made in less than 15 minutes. This is a beginner friendly recipe and doesn’t call for any expertise.

I have used whole-wheat bread for the recipe. However you can use any bread of your choice. I have used 3 eggs and 2 bread slices here as my family likes more of eggs in the dish. You can make the dish with equal number of eggs and bread slices , i.e. 3 slices of bread with 3 eggs. Add the bread cubes to the dish before the eggs are fully cooked so that the bread cubes are coated well with eggs.
Step by step recipe
Break 3 eggs in a bowl
Add black pepper powder and salt. Beat well and keep aside.
Trim the edges of the bread slices and cut into cubes. Keep aside
Heat oil in a pan. Add chopped onion, chopped green chillies, chopped ginger and garlic.
Saute till the onions become soft.
Add chopped tomato.
Saute till the tomato becomes mushy. Add turmeric powder, red chilly powder, cumin coriander powder and salt.
Pour the beaten egg mixture
Stir on low flame for 2 to 3 minutes. Before the eggs are fully cooked, add bread cubes
Mix gently. Garnish with chopped coriander leaves.

Ingredients
3 eggs
2 slices of wholewheat bread
1 medium onion, chopped
1 tomato, chopped
2 tbsp oil
a pinch of black pepper powder
2 green chillies, chopped
½ tsp chopped garlic
½ tsp chopped ginger
½ tsp turmeric powder
1 tsp red chilly powder
1 tsp cumin coriander powder
salt as per taste
2 tbsp chopped coriander leaves for garnishing
Method
- In a mixing bowl, break 3 eggs. Add black pepper powder and salt. Beat well and keep aside.
- Trim the edges of the bread slices and cut into cubes. Keep bread cubes aside.
- Heat 2 tbsp oil in a pan.
- Add chopped onion, chopped green chillies, chopped garlic and chopped ginger. Saute till the onion turns soft.
- Add chopped tomato. Saute and cook till the tomato turns mushy.
- Add turmeric powder, red chilli powder, cumin coriander powder and salt. Mix well.
- Add beaten egg mixture and stir on low flame for 2 to 3 minutes.
- Before the egg is fully cooked, add in the bread cubes.
- Mix gently and ensure that the bread cubes are coated well with egg.
- Add in the chopped coriander leaves.
- Serve hot.
